This is where the perfect one-pot chicken meal recipe from Top Chef Robbie Bell comes in.


Forget complex meals made up of multiple components—this simple dish only requires one pot, a few ingredients, and just under an hour to prepare.

Chef Bell uses onions, garlic, green olives, carrots, cherry tomatoes, sweet potato, rice, and chicken as the basis of his meal.

He then seasons the dish with smoked paprika, steak seasoning, salt and pepper, and finishes by sprinkling some herbs such as parsley and dill to garnish the dinner.

Chef Bell's recipe is extremely flexible and any leftover vegetables can be substitutes.

‘The beauty of it is that you can put whatever you want in there,' he said. 'It doesn't really matter what goes in–it's the technique that's important.’

The chef also suggests using capsicum, peas, sweetcorn, and sausages as alternatives.

To prepare the chicken dish, chop the vegetables first and then heat them in an oven-safe pot.

Chef Bell begins with onions and garlic, then adds carrots and sweet potato.

Simmer the vegetables until they soften and then mix in the seasonings.

‘Next, put your protein on top and then just bang it in the oven until it's cooked,’ Chef Bell said.

He also suggests garnishing the meal with parsley, dill, or any of your favourite herbs.

Ingredients

  • Onions
  • Garlic
  • Green olives
  • Chicken
  • Smoked paprika
  • Carrots
  • Cherry tomatoes
  • Sweet potato
  • Rice
  • Steak seasoning

Method
  1. Chop the vegetables and set aside.
  2. Heat a few drops of cooking oil on an oven-safe pan.
  3. Add garlic and onions to the pan, followed by carrots and sweet potato.

  5. Put in the green olives and cherry tomatoes, followed by one cup of rice and two cups of vegetable stock.
  6. Place the chicken on top and put the pot in the oven at 180°C until cooked.
  7. Serve with parsley and dill.
