How to make the PERFECT roasted potatoes, according to celebrity chef Tilly Ramsay!

Potatoes that have been perfectly roasted until they are golden and crisp are one of those side dishes that can never fail to satisfy.
With their crispy exterior and mushy interior, these little bite-sized chunks of goodness are the perfect companion for roasted meats such as chicken, pork, or prime rib.
The quick and easy preparation of this side dish contributes to its comfort, but getting perfectly roasted potatoes every time can be difficult.
But worry not, folks, a young and promising chef (who takes after her dad) is here to show us how it's done every single time!

If you had seen Celebrity MasterChef Australia on Network Ten a few months ago, you'll remember Tilly Ramsay's famous duck dish that astonished both the judges and the audience.
But probably the most interesting thing about her recipe was the little trick she had for preparing absolutely flawless roasted potatoes.
Here's a rundown of how she did it!
First, she partially boiled the potatoes in water until they were "just tender". Once ready, she drained the water from the saucepan.
Then she just kept them in the pan while steaming, with 'something' over the top.
And to get them really fluffy on the inside but crispy on the outside, she gave the potatoes a good shake in the pan to "fluff up" their skin.
In the Celebrity MasterChef episode, she used a baking tray and popped it over the top of her saucepan of potatoes. Then using a tea towel, she held the tray and saucepan together while giving them a nice shake.
After shaking up the boiled potatoes, Ramsay then popped them into a large pan and coated them in duck fat for "better flavour". She noted that goose fat also works if you're not a duck fan.
For the last step, she threw the potatoes into a baking tray, popped them into the oven, and cranked up the heat.
And she's done – it's that easy!
