Honey Mustard Roast Chicken with Gravy

The holidays are only a few days away and we all know what that means… It’s time to indulge in all of your favourite foods. And there's no better way to celebrate than feasting on a golden-brown, flavourful roast chicken. If you're looking for a guaranteed show-stopping roast this Christmas, then look no further! This Honey Mustard-flavored Roast Chicken is a surefire winner that will leave you and your guests wanting more.

Here are the ingredients you need:

1. 80 grams of butter
2. A tablespoon of chopped chives
3. Two teaspoons of Dijon mustard
4. Two teaspoons of honey
5. A whole chicken
6. Two tablespoons of plain flour
7. Two cups of chicken stock
8. Roasted vegetables, to serve


Start by preheating the oven to 180 degrees Celsius before lightly greasing a flameproof roasting pan. Then, combine the whole chicken, chives, mustard and honey in a bowl. Gently slide your fingers between the flesh and skin of the chicken breast to loosen.

Spoon the mixture under the skin and spread the mixture evenly over the chicken. Use your hands to spread the ingredients and coat the chicken thoroughly. Then, season the chicken to your liking with salt and pepper. Use a string to secure the chicken legs together.

Place the chicken in the prepared pan before roasting it for 1 and 1/4 hours or until the juices run clear when the thickest part of the thigh is pierced with a skewer. Once it’s perfectly cooked, place it on a serving platter and set it aside for 10 minutes to rest.

Meanwhile, pour the juices from the pan into a heatproof jug and discard the fat from the surface, reserving about two tablespoons. Return the fat to the pan, then place over medium heat. Add flour and cook, stirring and scraping the bottom of the pan, for about 2 minutes.

Gradually add the chicken stock and pan juices, stirring and scraping constantly. Bring them to a boil then cook for 2 minutes or until the mixture thickens. Strain into a jug. Serve the chicken with gravy and roasted vegetables. And there you have it – an easy and delicious recipe for honey mustard roast chicken that's sure to impress the whole family!
