Honey Hasselback Potatoes

When it comes to potatoes, we’re HUGE fans. Sure, there are plenty of exciting ways to cook them. Still, nothing quite beats a classic roast potato – and this particular dish might just be your new favourite way to eat them!
This honey Hasselback potato recipe, for instance, creates an incredibly delicious combination with the sweetness of buttery honey perfectly counterbalanced by a pinch of salt. Not only that, but they also look extra-special, so they're perfect for dinner parties or special occasions. Serve this dish up and watch your guests' eyes light up!
Here are the ingredients you need:
1. A dozen potatoes, peeled
2. Olive oil spray
3. 40 grams of butter
4. A quarter cup of honey
Start by preheating the oven to 200 or 180 degrees Celsius, fan-forced. Then, line a baking tray with baking paper.
Cut a small slice off the potatoes, lengthways, so they sit flat on the chopping board. Position a bamboo skewer on each side of the potato. After that, cut thin slices on top of the potatoes. Don’t cut the whole way through (the skewers will help prevent this).
Arrange them on a prepared tray and spray generously with oil. Pop the tray in the oven for about 40 minutes. Meanwhile, melt the butter and honey together in a small saucepan. Brush some of the honey mixture over the potatoes before baking for a further 40 minutes. Brush some of the mixture two more times while it cooks, or until golden brown and caramelised.
Transfer the potatoes to a plate and brush with any remaining honey mixture. Sprinkle with salt and serve! Bon appetit.
