Hearty Spiced Carrot & Lentil Soup

This soup is a delicious and hearty vegan soup. It is traditionally made with carrots, lentils, and spices such as cumin and chilli powder. It is a quick and easy soup to make and is perfect for a winter meal.
This soup is packed with healthy ingredients, including carrots, lentils, and spices. It is high in fibre and vitamins and can easily be made vegan or vegetarian.
Ingredients:
-400g of carrots, peeled and diced
-1/2 onion, diced
-2 cloves garlic, minced
-1 tsp cumin
-1 tsp smoked paprika
-1 tsp turmeric
-1/2 tsp chilli powder
-1/4 tsp black pepper
-1 tbsp olive oil
-1 cup green lentils, rinsed
-4 cups vegetable broth
-1 can (400ml) coconut milk
Instructions:
1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion, garlic, and all of the spices. Cook until the onion is softened, stirring occasionally.
2. Add the carrots and lentils, and cook for a few more minutes.
3. Add the vegetable broth and coconut milk. Bring to a simmer and cook until the carrots and lentils are very soft, about 30 minutes.
4. Use an immersion blender to blend the soup until smooth. Alternatively, you can transfer the soup to a regular blender and blend it in batches.
5. Serve hot, with some crusty bread on the side.
You could add a dollop of yoghurt on top or garnish it with chopped fresh herbs to make this soup extra special.
