A hearty soup like this is a great budget meal which you can have over a couple of days.
A great soup to use up any leftover vegetables from the week and an easy way to add in some extra garlic to fight off any flu like symptoms. A great soup to freeze as well.

Ingredients
- 3 carrots, diced
- 4 small white potatoes, diced
- 1 brown onion, diced
- 2 cloves garlic, diced
- 1L Chicken Liquid Stock
- 2 chicken breasts
- 1 tbs Vegetable Stock Powder
Method
- In a large pot put in all vegetables and garlic with a drizzle of olive oil. Allow them to cook for 10 minutes, whilst stirring then add liquid stock and stock powder.
- Place chicken breasts into pot, and if the liquid doesn’t cover the chicken add some more hot water till it does.
- Place lid on top and let cook for 20 minutes.
- Take the chicken breasts out of the pot and on a chopping board shred the chicken with two forks. They should fall apart quite easily.
- Take the pot off the heat, place the pulled chicken back into the pot and serve with some warm crusty bread.
