Healthy Superfood Salad

I haven't posted recipes for awhile as I have been trying a lot of new and healthy recipes. Some really delicious and others not so nice.

I'm going to post a few of the good ones.

This first salad is packed with goodness including kale which I was never a fan off until this salad.

Ingredients

Salad


1 cup chopped strawberries 🍓
1/4 cup blueberries 🫐
4 cups baby spinach
100g feta cheese cubed
1 cup kale chopped
1/2 red/ purple onion thinly sliced

Dressing
1/4 cup blueberries 🫐
2 tablespoons extra virgin olive oil
2 teaspoons balsamic vinegar
1/2 tablespoons Dijon mustard

1 teaspoon of either honey or maple syrup
2 tablespoons water
Salt n pepper to taste

Method

Salad

1. In a large salad bowl add chopped kale and massage and squeeze for 5 minutes ( see notes)

2. Add all other salad ingredients to kale and toss

Dressing
1. Add all ingredients to a food processor, blender or use a hand blender and blitz until smooth

Pour dressing over salad and enjoy

I have this salad by itself as a main but hubby has a nice of chicken or a crumbed chicken tenderloin with it

NOTE
When ever I use kale I massage for 5 to 10 minutes. It's so important as this step tenderises it. I won't eat kale unless This step has been done. And kale is a real superfood

I use kale in my smoothies every day and kale crisps are fabulous and easy to make. You can googke them. Kale is great fkr the eyes and prevention of macular degeneration apparently so good enough for me and I love it in the above forms so easy as.

I don't think enough people know exactly how good kale is for you . This salad is like,a big vitamin pill.
 
I love Kale and I used to grow it when I lived in Europe . They have different ways to use it .
First the frost needs to get over it , for most people they believe you should not consume it before it is frosty weather . Then you cook potatoes in a Dutch oven and add the kale -finely chopped - and add a smoked sausage on top . Yum. When it is served on a deep plate you make a hole in the middle and poor in gravy and around the edge of the plate you add some cut up silver onions and spread mustard .
Nowadays I use it in many salads with other healthy vegetables . It is a very healthy vegetable and I eat it a lot when in this hot Summer. Keep up sending the healthy recipes Suzanne , thanks for sharing .
