Who says tacos can't be both nutritious and bursting with flavour? Get ready to satisfy your cravings with these quick and easy Healthy Japanese Beef Tacos. Embark on a culinary journey that fuses the best of Japanese cuisine with a beloved Tex-Mex classic. In just 17 minutes, you'll have a delicious meal perfect for those busy midweek nights. These tacos are a feast for the eyes and a delightful explosion of taste. So, let’s start cooking!

Ingredients:

10g dried shiitake mushrooms

500g beef stir-fry strips

2 tbsp teriyaki sauce or marinade

2 tsp wasabi paste

1/2 small radish, shredded

1 large carrot, shredded

1 Cucumber, halved lengthways, thinly sliced

3 tsp mirin

8 large butter lettuce leaves

Nori strips to serve

Toasted sesame seeds to serve

Sliced red chilli to serve



Instructions:

1. Place mushrooms in a heatproof bowl, then add boiling water to cover. Leave for 5 minutes to soften.

2. Meanwhile, combine the beef, teriyaki sauce, and wasabi paste in a large bowl and mix well.

2. Spray a large non-stick frying pan with oil and heat it over medium-high heat. Add the beef in batches and stir-fry for 1-2 minutes or until it just cooked through.

3. Drain the mushrooms and squeeze out any excess moisture. Roughly chop or slice, then add to the beef. Cook for an additional minute.

4. combine the radish, carrot, and cucumber in a separate bowl. Add mirin, then toss to combine. Season with salt and pepper.

5. Place two lettuce leaves on each serving plate. Top them with the salad mixture and beef.

6. Garnish with nori strips, sesame seeds, and sliced chilli on top. Serve and enjoy!

Optional ways to make it extra special:

1. Add a dollop of Japanese mayonnaise onto the tacos for an extra creamy texture.

2. Add some pickled ginger for a zingy flavour.

3. Top with a sprinkling of furikake for a salty crunch.
