I want to add a few recipes that are easy, low cost and healthy or healthier.

This recipe you can add dried fruits or swap the seeds or dried fruit for your favourite eg cranberries, sultanas .

DATE AND CINNAMON GRANOLA
This healthy granola recipe is packed full of goodness and is guaranteed to keep
you sustained throughout the morning. There is no refined sugar as it is naturally
sweetened with dates and honey. A delicious start to any day!
Ingredients:
1 cup sunflower seeds
1 cup pumpkin seeds
1 cup desiccated coconut
1 cup rolled oats
1 cup chopped dates
4 tbsp coconut oil, melted
4 tbsp honey, melted
4 tsp ground cinnamon
Method: • Preheat oven to 160°C (320°F). • Place all the ingredients in a large bowl and mix until well combined. • Tip the mixture into a large roasting pan and spread out evenly. • Bake for 10 minutes, then give the mixture a good stir and bake for a further
5–10 minutes or until lightly toasted.
• Leave to cool in the pan, then transfer to an airtight container and use within
two weeks.
Serves: 8
Prep Time: 10 minutes
Cooking Time: 15-20 minutes

That looks great! - and the fact it can be stored for a few weeks - i don't by toasted granola-store bought, too expensive and too much sugar-love the fact that it is toasted-i find that much easier to digest and i like the crunch! Thankyou:_)
 
I have muesli in the warmer summer months every morning , do roast it in the oven ,also add linseeds , nuts like almonds, cashews and walnuts , but not the dried fruit , also add later apricots , goji berries , cranberries , figs .after it has cooled down .
Do not add the oil and the honey . For me it is sweet enough with the fruit . So there are no clusters . I have enough for a few months , leave it in an air tight container.
