Healthy Chinese Lemon Chicken

It can be easy to get stuck in a cooking rut, so if you find yourself cooking the same set of meals for months now, we’ve got just the recipe that will spice up your standard weeknight meals. Ladies and gentlemen, we present to you Chinese Lemon Chicken with a healthier twist. But don’t get us wrong! Although it’s healthier, you can expect that it still boasts a lovely combination of sweet and zesty flavours. With only a few simple ingredients, you can whip up a delicious and nutritious meal for yourself or your family in no time. Let's get cooking!
Here are the ingredients you need:
1. 1/3 cup of lemon juice
2. 1/4 cup of honey
3. Two tbsp of light soy sauce
4. Two garlic cloves, crushed
5. A small piece of fresh ginger, peeled, grated
6. A tbsp of cornflour
7. 1/4 a cup of shao hsing (Chinese cooking wine)
8. 800g of chicken breast fillets, cut into 2cm pieces
9. Extra 1/4 cup of cornflour
10. Two tbsp of peanut oil
11. Four spring onions, cut into 4cm lengths
12. A lemon, sliced, quartered
13. A tsp of sesame seeds
14. Steamed brown rice, to serve
15. Sliced red chilli, to serve
Combine the lemon juice, honey, soy sauce, garlic and ginger in a small saucepan. Bring them to a simmer over medium heat. Then, place the cornflour and shao hsing in a small jug. Careful pour it over the honey mixture. Cook the sauce for 2 minutes or until it bubbles and thickens. Remove the pan from the heat.
Meanwhile, place the pieces of chicken in a separate bowl. Sprinkle some cornflour and season with salt and pepper. Toss the pieces to coat each one fully. Heat some oil in a large frying pan over medium-high heat and cook the chicken for 10 minutes or until they are golden brown.
Add the honey mixture into the pan as well as some spring onions and lemon slices. Cook and toss them for a minute or until the mixture is combined. Top it all off with sesame seeds and serve with a bowl of fresh rice and chilli.
