Healthy chicken and sweet potato soup

Boost your immune system with this delicious and nutritious chicken and sweet potato soup. This soup is a classic combination of sweet and savoury and is popular in many cultures around the world. Ingredients:
1 chicken-style stock cube
200g chicken breast
400g packet Hart & Soul Sweet Potato Ginger Soup with Turmeric
55g (1/3 cup) roasted sweet potato
1 can of chickpeas, rinsed, drained
20g baby spinach
Instructions:
1. Boil 3 cups of water (750ml) in a saucepan and add the stock cube. Stir until dissolved. Add chicken and reduce heat to low, then cover and cook for 12-15 minutes or until fully cooked. Remove from the heat and set aside in the pan for 5 minutes, then transfer to a plate.
2. Cut the poached chicken in half and use one half in the soup, saving the other half for later use.
3. Heat the soup according to the packet instructions. Shred the chicken with a fork and mix it into the soup with sweet potato, chickpeas, and spinach until warm. Season to taste.
4. Serve the soup topped with parsley, if desired.
