Healthier raspberry muffins

I noticed recently that I've been craving sweets more than usual. But, as we all know, indulging in too much sugar can be detrimental to our health and well-being. So when I stumbled upon this Healthier Raspberry Muffins recipe, it felt like a match made in dessert heaven. These muffins offer the perfect balance of wholesome ingredients and irresistible sweetness, making them a guilt-free treat to satisfy my cravings.
Ingredients:
1 1/2 cups wholemeal self-raising flour
1 cup self-rising flour
200g Cottage Cheese
1/2 cup honey, melted
1/3 cup liquid coconut oil
2 eggs, lightly beaten
2 tsp vanilla extract
1 1/3 cups frozen raspberries
Instructions:
1. Preheat your oven to 190C/170C fan-forced, and line a muffin pan with paper cases.
2. In a large bowl, combine the flours. Make a well, then add cottage cheese, honey, oil, eggs, and vanilla. Mix until just combined. Fold in the raspberries.
3. Divide the batter evenly among the paper cases and bake for 20 to 22 minutes, until golden and firm to the touch. Let them stand in the pan for 5 minutes, then transfer to a wire rack to cool.
4. Serve warm or cold. Enjoy!
To make these muffins extra special, add a sprinkle of cinnamon or nutmeg to the batter, or top each muffin with a dollop of yoghurt. You could also try adding some chopped nuts or a spoonful of almond butter to the mixture for an extra protein boost. Enjoy!
