Healthier Pork & Cabbage Stir-fry

Pork and cabbage stir-fry is a popular dish in many parts of the world, including China, Korea, and Japan. The dish is traditionally made with pork belly, but any type of pork can be used. The pork is stir-fried with cabbage and other vegetables and then seasoned with soy sauce, rice vinegar, and sesame oil.
But our recipe for today is designed to be a little healthier. We’ll use pork loin, which is leaner and an excellent source of protein, potassium and zinc. The best part about Healthier Pork & Cabbage Stir-fry is that it is relatively easy to make and can be done in under 30 minutes (not including the marinating of the meat!) Packed with protein and fibre, this dish is not only nutritious but also filling.
To make this dish, you'll need:
- 500g pork loin, cut into strips
- 1/2 head cabbage, shredded
- 1 thumb-sized piece of ginger, peeled and minced
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon rice wine
- 1 teaspoon cornstarch
- 1/4 teaspoon black pepper
- 1 tablespoon vegetable oil
- 1/4 cup chicken broth
- Salt to taste
Instructions:
1. Combine the pork, soy sauce, rice wine, cornstarch, and black pepper in a large bowl. Marinate for 30 minutes.
2. Heat the oil over high heat in a wok or large skillet. Add the pork and stir-fry for 5 minutes or until browned.
3. Add the cabbage, ginger, garlic, and chicken broth—Stir-fry for 3 minutes, or until the cabbage is wilted.
4. Season with salt to taste. Serve with steamed rice.
To make this dish extra special, you can top it off with some eggs and add a few drops of sesame oil. You can also garnish with green onions and roasted peanuts.
