Here are the ingredients you need:

1. A tablespoon of extra virgin olive oil
2. Four pork loin steaks
3. A small brown onion, finely chopped
4. A garlic clove, crushed
5. 200 grams of button mushrooms, sliced
6. 200 grams of swiss brown mushrooms, sliced
7. Two teaspoons of plain flour
8. A cup of milk
9. A teaspoon of wholegrain mustard
10. A teaspoon of chicken stock powder
11. Crusty bread, to serve

Ingredients for the gremolata:

1. A quarter cup of chopped fresh flat-leaf parsley leaves
2. Two teaspoons of grated lemon rind
3. A garlic clove, finely chopped

First make the gremolata by combining parsley, lemon rind, and garlic in a small bowl. Mix it well then set it aside.

Heat half the oil in a large, deep frying pan over medium-high heat. Then cook your pork loins for 4 to 5 minutes per side or until they turn into a gorgeous golden brown colour. Transfer them to a plate and set them aside.

Heat the rest of the oil in the same pan, this time over low heat. Put the chopped onion in there and cook them for about three or four minutes. Add the garlic and mushrooms and cook for another five minutes or until the mushrooms are tender.

Sprinkle the flour over the mushroom mixture and cook for another minute, stirring to make sure it's evenly distributed. Then slowly pour in the milk and add the mustard as well as the chicken stock before cooking everything together for three to four minutes or until the broth reaches a slightly thickened texture.
Finally, put the pan-fried pork back into the pan and cook it for one more minute. Now all that's left to do is to garnish it with the gremolata and serve it with bread for a healthy, satisfying meal!

Well, I didn't follow the recipe to a T. I omitted the mustard, chicken stock powder and the gremolata for the top. It still was tasty. We have our diet needs and tastes so that is why I didn't put those ingredients in.
