Healthier honey chicken stir-fry

Say goodbye to greasy takeaway and hello to this healthier homemade version of everyone’s favourite Chinese dish: Honey chicken stir-fry! If you’re like me, who loves easy, one-pan recipes, you’ll definitely want to add this to your regular dinner rotation. This dish is packed with flavour, but is much lighter and healthier than your average stir-fry. Plus, it’s really easy to make and only requires a few simple ingredients that you probably already have in your pantry.

Ingredients:

270g pkt buckwheat noodles or rice of choice

60ml (1/4 cup) honey

2 tbsp salt-reduced soy sauce

4 garlic cloves, crushed

3 tsp cornflour

1 tbsp extra virgin olive oil

500g chicken tenderloins, excess fat trimmed

300g broccoli, cut into small florets

1 zucchini, halved lengthways, thinly sliced

150g snow peas, trimmed, halved diagonally

80g (1/2 cup) roasted unsalted cashews, coarsely chopped

2 green shallots, thinly sliced diagonally

1 tsp sesame seeds, toasted



Instructions:

1. Cook the noodles in a large saucepan of boiling water following the packet directions. Drain.

2. Combine the honey, soy sauce, garlic, and 60ml (1/4 cup) water in a small bowl. Add the cornflour and stir until dissolved.

3. Heat half of the oil in a wok or large frying pan over medium heat. Add the chicken and stir-fry for 3-4 minutes or until the chicken is golden. Transfer to a plate.

4. Heat the remaining oil in the wok or pan. Add the broccoli and zucchini and stir-fry for 5 minutes. Add a little water if the vegetables start to dry out.

5. Add the noodles, chicken, snow peas, cashews, and sauce to the wok or pan. Stir-fry for 2 minutes or until the sauce has thickened and the snow peas are tender and crisp.

6. Divide the stir-fry among serving bowls. Sprinkle with shallots and sesame seeds, and serve immediately.

To make this dish extra special, you could:

-Add a pinch of chilli flakes for a bit of spice

-Stir in some finely chopped ginger for an extra zing

-Add a splash of rice wine vinegar or lemon juice for a bit of acidity
