Ham and vegetable slice

Ham and vegetable slice is a classic Australian dish that many of us grew up eating. It is a simple yet tasty dish that is easy to make and can be served for either breakfast, lunch or dinner. Traditional ham and vegetable slices are made with a pastry base, but you can also make them with a potato base.

Ingredients:

1 medium zucchini, grated
1 small carrot, peeled, grated
1 medium red capsicum, finely chopped
100g ham, chopped
3/4 cup grated cheese (500g)
1/2 cup self-raising flour
1/4 cup vegetable oil
4 eggs, lightly beaten
6 cherry tomatoes, halved



Instructions:

1. Preheat oven to 180°C/160°C fan-forced and grease a 3.5cm deep, 16.5cm x 26cm slice pan. Line the base and sides with baking paper, allowing a 2cm overhang at the long ends.

2. In a bowl, combine zucchini, carrot, capsicum, ham, cheese, and flour. In another bowl, whisk the oil and eggs together. Mix the egg mixture with the vegetable mixture and stir to combine. Pour into the pan and smooth the surface.

3. Press the halved cherry tomatoes evenly into the top of the slice. Bake for 30 minutes or until a skewer inserted in the centre comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

4. Cut into 12 pieces and serve.

Optional ways to make the dish extra special:

- Add some fresh herbs such as basil, thyme, rosemary or oregano to the vegetable mixture.

- Sprinkle some chilli flakes over the top of the slice for a spicy kick.

- Add some olives for extra flavour.

- Drizzle some pesto over the top of the slice before baking.

How long will this slice last in the frig. , If I make it on sunday,, can i take some daily to snack on while driving trucks????
