Have you ever heard of a Green Jaffle? It might sound like something made-up, but it's a real and delicious dish worth trying. The Green Jaffle is a unique twist on this classic favourite, featuring vibrant green ingredients that not only look amazing but are also loaded with nutrients. Imagine biting into a crispy, golden sandwich filled with fresh spinach and tangy cheese. Sounds amazing, right? Get ready to satisfy your taste buds because the Green Jaffle is here to make your day!

Ingredients:

2 slices bread

5g butter, softened

1/4 avocado

2 tbsp Bulla Cottage Cheese

2 tsp sliced green jalapeno, finely chopped

15g baby spinach leaves

1 slice cheddar



Instructions:

1. Begin by spreading butter on the slices of bread. Then, place one slice on a sandwich press with the buttered side facing down.

2. Coarsely mash some avocado over the bread and top it with cottage cheese, jalapeno, spinach, and sliced cheese. Season the sandwich with some pepper to taste.

3. Finish with the remaining bread slice, butter-side up. Close the sandwich press lid, and cook it for 2-3 minutes or until it is toasted to your liking.

4. Cut and serve.

Optional Extras:

-Add some diced tomato, red onion or capsicum for added flavour and crunch

-Swap out the Bulla Cottage Cheese for some cream cheese or ricotta

-Add a fried egg for an extra protein punch

-Sprinkle with some chilli flakes for a spicy kick

Yuck! is all I can say as I don't eat avos or spinach so that is a no-no for me!
