Chicken Souvlaki Recipe​


Chicken Souvlaki is the best recipe to satisfy your Greek cravings! We marinate the chicken in a Greek marinade first and then grill the skewers to a tasty smoked perfection. Serve it in a warm pita bread with red onions, tomatoes, and tzatziki sauce.

Equipment​

  • wood or metal skewets soaked, if using wood

Ingredients​

  • 2 lbs chicken breasts about 4

Marinade​

  • 1/2 cup canola or olive oil
  • 3 tbsp white wine vinegar
  • 2 lemons - juice only 3 is lemons are not very juicy
  • 6 garlic cloves smashed
  • 3 tbsp fresh minced dill weed*
  • 3 tbsp fresh minced parsley*
  • 2 tsp dried oregano
  • 1 - 1.5 tsp coarse salt more or less to taste
  • 1/2 tsp black pepper

To Serve:​

  • 6-8 Greek pita bread warmed
  • 2 tomatoes sliced
  • 1/2 red onion sliced thin
  • 1/2 cup tzatziki sauce more or less

Instructions​

  • Combine all of the ingredients for the marinade in a bowl and whisk well. Taste to see if you have enough salt. (Make sure to taste before you add the chicken!)
  • Cut the chicken into about 1-inch cubes and add into a large zip-top bag (or a glass food storage container for marinating). Add the marinade and mix well to make sure all the chicken is coated well.
  • Let the chicken marinate for at least 2 hours or overnight. (Don't exceed 12 hours of marinating time.)

To cook the chicken:​

  • For the best results, cook the chicken kebabs on the grill.
  • If you will be using wooden skewers, make sure to soak them in water first for about 45 minutes.
  • Prepare the grill and preheat it to medium-high heat. (As always, it's best to have two temperature zones on the grill so if you need to move the chicken over to the cooler side, you can.)
  • Skewer the chicken into the soaked skewers, fitting 4-5 pieces onto each skewer.
  • Grill the chicken kebabs for about 4-5 minutes per side, turning them a quarter of the way. (Total time will be about 16-20 minutes, depending on the thickness of the chicken pieces.)
  • While chicken is cooking, lightly brush pita bread with olive oil and place them onto the grill to heat through.

    Slice the vegetables and place them onto a serving dish.
  • To serve chicken souvlaki, top each warm pita bread with some grilled chicken, sliced onions, tomatoes, and tzatziki sauce.

Notes​

  • *Using dried herbs: you can definitely use dried herbs in the marinade, just use half the amount that the recipe calls for.
  • No grill? Make chicken in the pan: You can easily cook the chicken souvlaki skewers in the preheated skillet on the stove-top. Use a skillet that fits the chicken skewers well. Make sure to add some oil to the skillet and preheat it.Place the chicken skewers in the pan in one even layer and don’t let them overlap. Cook the chicken over medium to medium-low heat, turning it a quarter of the way every 3-4 minutes, once one side is nicely golden-brown. Cook just until the chicken is cooked through. You can use a meat thermometer to check internal temperature or cut into the biggest piece.1000017216.jpg

Or to make it
1cup &Half
Sr flour
tspn salt
Half cup oil
Yogart half cup
Water to the consistency you want knead it little cover with towel let sit 1 hour.
Then take out divided into equal portions
Sprinkle flour on bench get rolling pin stretch it with pin by rolling both side non stick pan spray little oil before putting in there turn it twice watching it doesn’t burn.
You can also do in the oven without oil or on top stove. Presto your own bread.
Indian you can get special pan just for bread non stick. Keep 1klg Sr flour on hand for fresh bread every day.

Optional
It is also a base recepie to play with by adding herbs and shallot and garlic you can add to it before cooking.

Tzatziki Sauce
This classic Tzatziki Sauce is easy to make and features fresh ingredients like cucumber, olive oil, Greek yogurt, garlic, herbs, lemon juice, more.

Ingredients
1 lb whole milk Greek yogurt
10-12 oz cucumber 1 medium cucumber
1-2 garlic cloves
1/4 cup olive oil
2 tbsp fresh lemon juice
1 tbsp white wine vinegar
2 tbsp minced fresh dill weed
1 tbsp fresh minced mint
salt to taste
pepper to taste
Instructions
Wash the cucumber and cut it in half, length-wise. Scoop out the seeds from the cucumber and discard.
Grate the cucumber on a fine grater and place it into a mesh strainer. Salt the cucumber with some salt, mix it, and let it sit and drain off the excess moisture for about 10 minutes.
Combine all of the ingredients in the mixing bowl, gently squeeze the cucumber, and add it to the bowl. Mix well.
Serve right away of transfer into an air-tight container and refrigerate.
Store the Tzatziki sauce in the refrigerator, in an air-tight container, for 3-4 days.
