Grandma's Baked Rice Pie

I've been trying a lot of new dishes over the past few weeks and was surprised how nice this one was and a great budget dish

Serve with tossed salad or steamed vegetables

Ingredients​

  • 500g minced beef
  • 1 medium chopped onion
  • 1 small chopped green capsicum 🫑
  • 2 cups cooked long grain rice
  • 1 can (800g) or 2 x 400g diced tomatoes, undrained
  • 1 can kernel corn, drained
  • 1/2 jar sliced black olives, drained (optional)
  • 250g diced bacon
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1-1/2 cups shredded light tasty cheese, divided
  • 1/2 cup dry bread crumbs
  • 1 tablespoon butter, melted

Directions​

  1. Preheat oven to 175°/ 155°C fan-forced
  2. In a large frypan, cook beef, onion and capsicum over medium heat until meat is no longer pink, breaking it up; drain.
  3. Stir in rice, tomatoes, corn, olives, bacon and seasonings; heat through. Stir in 1 cup cheese until melted.
  4. Transfer to a greased 11x7-in. baking dish. Sprinkle with remaining 1/2 cup cheese. Toss bread crumbs with melted butter; sprinkle over top.
  5. Bake, uncovered, 15-20 minutes or until cheese is melted.
