Garlic Butter Chicken with Parmesan Cauliflower Rice

Garlic Butter Chicken with Parmesan Cauliflower Rice is a delicious and healthy dish that is perfect for a weeknight meal. This dish is made with chicken breasts cooked in a garlic butter sauce and then served over a bed of cauliflower rice cooked with Parmesan cheese. This dish is also low-carb, perfect for those watching their diet.

Ingredients:

2 large boneless and skinless chicken breast, halved horizontally to make 4
1/2 cup fresh Parmesan, finely grated
Salt and fresh cracked black pepper
2 large cloves of garlic, grated
1 teaspoon paprika
1 teaspoon Italian seasoning
4 tablespoons of Olive oil
1 head cauliflower, riced
1/2 cup white onion, chopped
2 large cloves garlic, minced
2 tablespoons vegetable stock
Juice one lemon (+ zest, if you like)
Red chilli pepper flakes, optional
1/4 cup fresh parsley, chopped

Directions:

To make the chicken:

1. Mix together Parmesan cheese, grated garlic, paprika, and Italian seasoning in a shallow plate. Season the chicken breasts with salt and pepper, then dredge in the Parmesan mixture. Shake off any excess and set the chicken aside.

2. In a large non-stick skillet, add 2 tablespoons of Olive oil over medium-high heat. Cook the chicken cutlets until they are golden on each side and cooked through, about 3-4 minutes per side. Transfer the chicken to a plate and set it aside.


To make the cauliflower rice:

1. In the same pan, add 2 tablespoons of Olive oil. Fry the garlic and onion for 1 minute until fragrant. Add the riced cauliflower to the skillet and stir to mix everything together well. Cook, stirring regularly, for 1 minute.

2. Add 2 tablespoons vegetable stock, about half the parsley, and lemon zest (if using). Cook the cauliflower rice for one more minute to reduce the juices, then add the lemon juice and some additional Parmesan cheese if desired.

3. Adjust the seasoning as needed, then add the remaining parsley. Return the chicken breasts to the pan and reheat quickly. Serve with fresh cracked black pepper, red chilli pepper flakes, and more Parmesan cheese. Enjoy!

To make this dish extra special, you could try serving it with a side of roasted vegetables.
