Fresh Bean Casserole

This is a very delicious bean casserole no need to add meat. If you want to add meat Just cut meat into small pieces and brown before step 1

Ingredients :
1 kg of fresh beans ( I use stringless) See note below
1 x large onion chopped
2 X large potatoes cut into 8 chunks potato
1 x large carrots optional slice or cut into chunks
1 x garlic clove or 1 teaspoon of jar garlic
2 x teaspoon of cinnamon
2 x tablespoons tomato paste
1 x can of chopped tomatoes
1 x cup of water
Rice to serve
Method :
1. Cut ends of beans , if you are not using stringless then string them
2. Heat a little oil in frypan , add onion and cook until soft, add garlic and cook for 1 minute
3. Add potatoes and carrots and cook for 3 minutes
4. Add Beans, diced tomatoes, tomato paste, cinnamon, and water. Mix together
5. Bring to boil then reduce to low and simmer covered for 2 hours
Alternative when you bring it to the boil add to slow cooker and cook on high for 6 hours.
NOTE : IF USING MEAT ADD AT STEP 4
serve on top of steamed rice.
