French Toast

This takes me back to the 70s when it was a regular brunch for me.
Prep time : 10 min
Cooking time: 10 minutes
Serves 2

Ingredients
2 eggs
1 cup of milk
1/2 teaspoon vanilla essence
40g butter
4 thick slices of day old bread halved diagonally
Cinnamon and sugar to serve
Method
1. Crack the eggs into a wide, shallow dish and add vanilla essence and milk. Whisk well.
2. Melt half the butter in a frypan. When the butter begins to foam, quickly dip both sides of bread into the egg mixture, letting the excess run off, then fry in the butter for 1 to 2 minutes or until the underside is golden. Turn the bread and cook the other side..
3. Transfer to a plate and cover with foil.
Add more butter to frypan and cook remaining bread.
Serve sprinkled with sugar and cinnamon. Also good with Maple syrup.
