1. Egg muffins with veggies and cheese

Egg muffins are a high-protein breakfast option that you can customize with a variety of ingredients. They’re also inexpensive, using ingredients you likely already have on hand.

Ingredients:

  • 6 large eggs
  • 1/4 cup milk (optional, for fluffier texture)
  • Salt and pepper to taste
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach or kale
  • 1/4 cup shredded cheese (cheddar, feta, or mozzarella)
  • 1/4 cup chopped onion or green onion
  • Optional: chopped ham, cooked sausage, or diced tomatoes

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin.
  2. In a mixing bowl, whisk the eggs with milk, salt, and pepper.
  3. Add in the chopped vegetables, cheese, and any other desired fillings.
  4. Pour the mixture into the muffin liners, filling each about 3/4 full.
  5. Bake for 18–20 minutes or until the muffins are set and lightly golden.
  6. Allow to cool, then store in an airtight container in the fridge for up to five days.

Reheating:

Microwave for 30–45 seconds.
