Easy Sweet & Sour Chicken

Sweet and sour chicken is a popular dish in Chinese cuisine. The dish is made by coating chicken in a batter and deep-frying it before tossing it in a sweet and sour sauce.



Ingredients:

-500g chicken breast, cut into bite-sized pieces
-1 egg
-2 tablespoons cornflour
-2 tablespoons plain flour
-1 teaspoon salt
-1/2 teaspoon baking powder
-1/2 teaspoon baking soda
-1 tablespoon vegetable oil
-1/2 cup sugar
-1/4 cup white vinegar
-1/4 cup rice vinegar
-1/2 cup chicken stock
-1/4 cup tomato sauce
-1 teaspoon soy sauce

Instructions:

1. In a large bowl, whisk together the egg, cornflour, plain flour, salt, baking powder, and baking soda.

2. Add the chicken pieces to the bowl and toss to coat in the batter.

3. Heat oil in a large wok or frying pan over medium-high heat. Add the chicken and cook for 5-7 minutes until golden and cooked through.

4. In a small saucepan, combine the sugar, white vinegar, rice vinegar, chicken stock, ketchup, and soy sauce. Cook over low heat until the sugar has dissolved.

5. Add the sauce to the chicken and toss to coat. Serve with steamed rice and vegetables.

To make the dish extra special, you could try adding some chopped pineapple or red and green capsicums to the sauce. Also, you can garnish it with some sesame seeds.

This dish is hearty, flavourful, and sure to please everyone at the table. Serve over rice or noodles and top with roasted cashews for a little extra crunch. So good!

I just love any recipe that has the name "Sweet & Sour." That simple recipe is a good "ring in" for a good Chinese recipe in Hong Kong that I have always said was THE best I have ever had in life. Add a little more "tasties" & you could easily have an excellent S & S on your hands. I would not be prone to adding ginger.
