Easy Stuffed Capsicum

Stuffed capsicum is a dish that originates from the Mediterranean region. It is a popular dish in countries such as Turkey, Greece, and Italy. The dish is traditionally made with a mixture of rice, ground meat (usually lamb or beef), onion, tomatoes, and spices. The capsicum is then stuffed with this mixture and baked in the oven.

Ingredients:

-2 large capsicums
-1 cup rice
-500g ground lamb or beef
-1 onion, diced
-1 tomato, diced
-1 teaspoon salt
-1/4 teaspoon black pepper
-1/4 teaspoon cumin
-1/4 teaspoon paprika



Instructions:

1. Using a small knife, cut the tops off the capsicums, then scoop out the seeds. Place the peppers cut-side up on a plate and microwave on high for 5-6 minutes, or until wilted and softened.

2. While the capsicums are cooking, in a large pot, cook rice according to package instructions.

3. In a medium skillet, cook ground lamb or beef over medium heat until browned. Drain any excess fat and remove it from heat.

4. In a large bowl, mix together cooked rice, ground beef/lamb, onion, tomato, salt, black pepper, cumin, and paprika.

5. Stuff capsicum with the rice mixture.

7. Place stuffed capsicums in a baking dish and bake in the oven for 30 minutes at 180 degrees celsius.



To make this dish extra special, you could use ground chicken or turkey instead of ground lamb or beef. For a vegetarian version, you could use cooked lentils or quinoa instead of ground meat. And instead of baking the capsicums, you could grill them and top them with some cheese.

I Make pretty much this recipe but I leave out the spices, I also do tomatoes at the same time and chop the inside of the tomatoes and add to the mixture.

I also use thus same mixture minus the spices to make both rolled cabbage leaves and vine leaves

If I used paprika and cumin I would only use it added to Greek yoghurt and served on the side to dip
