- 2 cups fresh spinach, chopped (or use frozen spinach, thawed and drained)
- 1 cup crumbled feta cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1/2 cup breadcrumbs (substitute with gluten-free breadcrumbs if needed)
- 1/4 cup grated Parmesan cheese (optional, for extra flavor)
- 1/4 tsp dried oregano
- Salt and pepper to taste
- 1 tbsp olive oil (for greasing)
- 1 tbsp olive oil (for brushing the patties)
Instructions
Step 1: Preheat the OvenPreheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
Step 2: Prepare the Filling
In a large mixing bowl, combine the chopped spinach, crumbled feta cheese, chopped onion, garlic, egg, breadcrumbs, Parmesan cheese, oregano, salt, and pepper. Mix well until all ingredients are well combined.
Step 3: Form the Patties
Take small portions of the mixture and shape them into small, round patties about 2-3 inches in diameter. Place them on the prepared baking sheet.
Step 4: Brush with Olive Oil
Brush the tops of the patties with olive oil to ensure they bake up crispy and golden.
