If you’re craving a quick, savory, and satisfying dish, these Easy Spinach and Feta Patties (also known as Spanakopita Patties) are your answer. Inspired by the classic Greek spinach pie, these patties are filled with a delightful combination of spinach, feta cheese, and herbs, all wrapped in a crispy, golden exterior. They’re perfect for a light lunch, dinner, or as an appetizer for your next gathering. Whether you serve them with tzatziki or your favorite dipping sauce, these patties are sure to please. Spinach feta patties are not only delicious but also easy to make, and they bake in under 30 minutes, making them an excellent choice for a healthy, quick meal.

Ingredients​


  • 2 cups fresh spinach, chopped (or use frozen spinach, thawed and drained)
  • 1 cup crumbled feta cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1/2 cup breadcrumbs (substitute with gluten-free breadcrumbs if needed)
  • 1/4 cup grated Parmesan cheese (optional, for extra flavor)
  • 1/4 tsp dried oregano
  • Salt and pepper to taste
  • 1 tbsp olive oil (for greasing)
  • 1 tbsp olive oil (for brushing the patties)

Instructions​

Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
Step 2: Prepare the Filling
In a large mixing bowl, combine the chopped spinach, crumbled feta cheese, chopped onion, garlic, egg, breadcrumbs, Parmesan cheese, oregano, salt, and pepper. Mix well until all ingredients are well combined.
Step 3: Form the Patties
Take small portions of the mixture and shape them into small, round patties about 2-3 inches in diameter. Place them on the prepared baking sheet.
Step 4: Brush with Olive Oil
Brush the tops of the patties with olive oil to ensure they bake up crispy and golden.
Step 5: Bake the Patties
Bake for 20-25 minutes, or until golden brown and crispy on the outside. Flip halfway through for even cooking.
Step 6: Serve and Enjoy
Once baked, remove from the oven and let the patties cool slightly. Serve warm with a side of tzatziki or your favorite dipping sauce.

Notes​

  • Use Fresh Spinach: While frozen spinach is fine, fresh spinach will give the patties a better texture and flavor.
  • Healthier Version: Substitute breadcrumbs with almond flour for a low-carb option.
  • Cheese Variations: Try using goat cheese or ricotta cheese for a different flavor profile.
  • Extra Crispy: Pan-fry the patties for 2-3 minutes per side before baking for extra crispiness.
  • Freezing Tips: Make a batch ahead of time and freeze uncooked patties. Bake from frozen, adding 5-7 extra minutes to the cooking time.
Also you can serve with side salad.

Or cut in half roll in pitta or Lebanese bread
With lettuce and tomato. I usually use plain yoghurt add crushed clove garlic and oil and salt stir dribble onto filling roll up so yum.
