-1 teaspoon of dried thyme
-1 bay leaf
-1/2 teaspoon of salt
-1/4 teaspoon of black pepper
-1/2 cup of frozen peas
Instructions:
1. Preheat the oven to 190 degrees Celsius.
2. In a large oven-proof pot, heat the olive oil over medium heat.
3. Add the onion and garlic and cook until the onion is translucent.
4. Add the sausages and cook until browned.
5. Add the carrots, parsnip, celery, chicken stock, red wine, thyme, bay leaf, salt, and pepper.
6. Bring the mixture to a simmer and then cover with a lid and transfer to the oven.
7. Bake for 30 minutes.
8. Remove the lid and stir in the frozen peas.
9. Bake again for 5-10 minutes, or until the peas are cooked through.
