Easy Salmon with Pesto & Parmesan

I'll confess - I'm generally not a huge fish lover. I can appreciate a good piece of sushi or some smoked salmon on a bagel, but when it comes to cooking fish at home I usually shy away. This recipe, however, is an exception. The pesto and Parmesan add so much flavour that the fish almost takes a backseat.
Ingredients:
1 salmon fillet
2-3 tablespoons pesto
1/4 cup Parmesan cheese
Salt and pepper
Lemon wedge
Instructions:
1. Preheat oven to 350°F degrees (175°C).
2. Place salmon fillet on a baking sheet with a square of aluminium foil large enough to make a parcel encasing the salmon.
3. Spread pesto over top of salmon, then sprinkle with Parmesan cheese.
4. Season with salt and pepper, then make a parcel out of the foil. Bake in preheated oven for about 20 minutes, or until salmon is cooked through.
5. Serve with a green salad and lemon wedges.
