Easy Peasy Veggie Soup

This soup is a great way to use up leftover vegetables! So feel free to use any veggie you have leftover in the fridge, it doesn't have to be the ones we have listed in the ingredients. Get creative! Regardless, the soup will be packed full of nutrients and is very easy to make. It can be enjoyed as a main meal or a side dish.


Ingredients:

1 onion, chopped

1 carrot, chopped

1 celery stick, chopped

1 zucchini, chopped

1 potato, chopped

1 sweet potato, chopped

1 tablespoon olive oil

4 cups vegetable stock

1 teaspoon salt

1 teaspoon pepper


Method:

1. In a large pot, sauté onion, carrot, celery, zucchini, potato, and sweet potato in olive oil.

2. Add vegetable stock and bring to a boil.

3. Simmer for 10 minutes, or until the vegetables are cooked through.

4. Season with salt and pepper.

5. Serve as a main meal or a side dish and enjoy!

made mine yesterday and I add some thick cream and I whizz the soup first
