Easy Peach Cobbler

Be sure to give this easy, comforting dessert a try. It can be served hot in winter or
cold in summer. Either way, it’s delicious.

Ingredients:

125g butter
2 x 400g tins sliced peaches in heavy syrup
1 cup plain flour
1 cup white sugar
1 cup milk
1 tsp baking powder
1 tsp vanilla

Method:

• Preheat oven to 180°C (350°F).
• Melt the butter and pour into a 20x30 cm (8x11 inch) baking dish.
• Place the flour, sugar, milk, baking powder and vanilla into a bowl and mix
to combine.
• Pour the mixture into the baking dish.
• Tip the peaches, including the juice, onto the mixture, ensuring the peaches are
not mixed into the batter (it’s important the peaches remain at the top).
• Bake for 50–55 minutes or until golden brown.
• Serve with cream, ice cream or custard.

I would not make this , too much butter and sugar , even the peaches have syrup, not juice . I rather go for a healthy apple/ rhubarb crumble with a bit of Greek yoghurt on top .

I'm making this today . It's raining in Sydney so it's either a cooking day or a stay in bed day and watch TV.

I'm going to cook until 2pm then the rest of the day it will be a movie arvo.

I'm cooking slow cooked beef in red sauce / gravy , mash and vegies. Peach Cobbler for desert and Vanilla slice
I'm not at all a cook but would like to try this but, if the peaches have to remain at the top, how do they get covered by the mixture?

It is an apple/ rhubarb crumble with oats and the apples have natural sugar . If I would use 125 g of butter and 1 cup of sugar that will be more I use in one month. I am very health conscious and the heart foundation would not recommend that . Also a lot of sugar may lead to type 2 diabetes.
I use many recipes of the Healthy Chef -Teresa Cutter . :)

INGREDIENTS
  • 2 sheet of thawed puff pastry
  • 1 cup of caster sugar
  • 1 cup cornflour
  • 1/2 cup custard powder
  • 1 litre milk
  • 60 ( 4 tbsp) gram butter
  • 2 egg-yolks
  • 2 teaspoon vanilla extract
  • Passionfruit icing​

    • 1 1/2 cup icing-sugar mixture
    • 2 teaspoon butter
    • 2 tablespoon passionfruit pulp
    • 2 teaspoon water

Method​

  • Vanilla slice​

    • 1
      Preheat oven to very hot, 220°C. Lightly grease and line a 20 x 30cm slice pan with baking paper.

      Grease and line 2 baking trays. Place pastry sheets on oven trays. Bake for l0-12 minutes, until golden. Gently flatten pastry with hand. Trim pastry to cover base of prepared pan.

      In a jug, combine sugar, cornflour and custard powder. Add a little of the milk to form a smooth paste. Place paste in a large pan with remaining milk and stir until smooth.

      Add butter and bring to the boil. Reduce heat and simmer, stirring, for 5 minutes or until mixture is thick and smooth. Remove from heat. Add egg-yolks and vanilla. Pour over prepared pastry sheet. Top with remaining trimmed pastry sheet. Chill for 1 hour.

      Meanwhile to make passionfruit icing; combine icing sugar, butter and passionfruit pulp in a small heat-proof bowl. Stir in enough water to make a smooth paste. Place over saucepan of simmering water and heat gently, stirring for 2-3 minutes until mixture is of spreadable consistency. Spread over pastry. Chill for 20 minutes until set. Cut into squares.
