Easy Pasta Salad Recipe

This easy pasta salad is a delicious and healthy dish that’s perfect for your next picnic! It’s packed with fresh ingredients like cherry tomatoes, cucumber, and chickpeas and tossed in a zesty lemon dressing. Best of all, it only takes a few minutes to throw together. So if you’re looking for a quick and healthy recipe, this easy pasta salad is the perfect choice!

Ingredients:

400g pasta
200g Fresh cherry tomatoes
1 cucumber, sliced into rounds
1/2 cup feta cheese
1/2 cup chopped parsley
1/4 cup chopped basil
1/2 cup chickpeas
1/4 cup pine nuts
1/4 cup diced red onion
1/2 lemon, juiced
1/4 cup olive oil
1 clove of garlic, minced
1 teaspoon Dijon mustard
Salt and pepper to taste

Instructions for the dressing:

1. Cook the pasta in a large pot of salted water according to package instructions. Drain and toss with a bit of olive oil.

2. In a large bowl, combine the pasta, cherry tomatoes, cucumber, feta, parsley, basil, chickpeas, pine nuts, and red onion.

3. Pour the dressing over the salad and toss to combine—season to taste with additional salt and pepper, if needed.

4. Serve at room temperature or chilled.

To make this dish special, you can use any pasta, but we love the bite of rotini or the shape of shells. You can also add some grilled chicken or prawns for a heartier meal. This salad is best served at room temperature or chilled.
