Easy Mushroom Soup Recipe

Soup is always a hit with family and friends, but sometimes it’s hard to find that perfect recipe that’s easy to make and is genuinely delicious at the same time. Don't worry, members, because we've got one of the best ones for you!
This mushroom soup recipe is guaranteed to be an instant success. With everyday ingredients, you can whip up a big pot of soup brimming with flavour and supremely creamy.
This dish can easily be reheated, making it an ideal choice for a quick and hearty meal.
So, here’s what you need:
2 tablespoons/30g butter
1 onion, chopped
400g white mushrooms
200g Swiss Brown/Cremini mushroom
1/8 teaspoon ground black pepper
1/4 teaspoon salt
200mL cream
800mL vegetable or chicken stock
Minced fresh parsley or thyme (Optional)
Croutons (Optional)
If you have all the ingredients down, let’s get cookin’!
The recipe states two kinds of mushrooms are needed but feel free to use 600g of your preferred mushroom for this recipe. Begin by dicing the mushrooms into small pieces.
Them melting the butter in a large pot over medium heat. Then, add the onion and garlic. When the onion and garlic are softened, after about 3 minutes, add the mushrooms. Stir regularly for 10 minutes.
Next, add the veg or chicken broth, salt, and pepper. Boil the mixture, remove the lid, and lower the heat. Bring to a simmer for about 15 minutes, then add the cream. Simmer for five minutes more. You may also use creme fraiche or sour cream instead of regular cream.
This next step is optional: if you have a blender, take the mixture off the heat and transfer it to the appliance and blitz until smooth. It is recommended to remove the cap on the feeding hole in the blender’s lid and place a folded tea towel over the opening to prevent the hot soup from exploding in the blender. Using the tea towel allows hot air to escape, relieving pressure from building up inside. As an added precaution, start from lower blender speeds.
If you don’t have a blender, don’t worry! The soup won’t be as smooth, but it should still be delicious! Once done, transfer to a serving bowl and top with parsley, thyme, or garnish of choice. You also can’t go wrong with croutons!
