Easy Homemade Seafood Salad

I love making lots of home made salads including seafood salad. I will be posting two variations that I make

Recipe by Dinner at the Zoo

INGREDIENTS​

  • 250g seafood extender , crab meat or seafood highlighter ( see below )
  • 250g green prawns peeled and deveined
  • 1 lemon quartered
  • 1/2 cup celery finely diced
  • 3 tablespoons red onion grated
  • 2 teaspoons lemon juice
  • salt and pepper to taste
  • 1/2 cup mayonnaise
  • 1 1/2 tablespoons fresh dill chopped, plus more for garnish

INSTRUCTIONS​

  • Bring a pot of salted water to a boil. Add the quartered lemon.
  • Add the prawns to the pot and cook for 1-2 minutes or until pink and opaque. Transfer the prawns to a bowl of ice water to stop the cooking process.
  • Drain the prawns then pat dry.
  • Place the prawns, seafood extender, celery, red onion, lemon juice, salt, pepper, mayonnaise and dill in a bowl. Toss gently to coat.
  • Sprinkle with extra chopped dill

You can buy the seafood highlighter from the Asian shops a lot cheaper than Coles..... remember it is bad for your health.
Seafood highlighter....It's only another name for fake crab meat

What's seafood extender?

Surimi (meaning 'ground meat' in Japanese) is the technical name for seafood extender. It's made from inexpensive fish (typically pollock or hake) pounded into a thick paste then shaped and cooked.
