½ onion, chopped
2 cloves garlic, chopped
8 cups water
4 teaspoons chicken bouillon granules
½ teaspoon salt
½ teaspoon black pepper
½ head cabbage, cored and coarsely chopped
1 can Italian-style stewed tomatoes, drained and diced
Directions
Heat olive oil over medium heat in a large stockpot. Stir in onion and garlic and cook until onion is transparent about 5 minutes.
Add the water, and then the bouillon, salt, and pepper. Once the mixture boils, bring the heat down to a simmer, and add the cabbage. Note that it should take about 10 minutes for the cabbage to be cooked.
Stir in tomatoes. Return to a boil, then simmer for 15 to 30 minutes, stirring often.
When done, serve hot and enjoy!
