Easy Healthy And Quick Chicken Noodle Soup

I've been making this quick soup for years and whenever my family have a flu they crave it .
I will add a Home made Stock recipe below but this particular recipe is for those who want a quick simple soup.
Serves 2
10 minutes preparation 15 minutes Cooking
good to freeze
Ingredients
1 x litre chicken stock ( homebrand is good)
1 x cup water or extra chicken stock
1 x small breast fillet cut into bite size pieces
1 x carrot sliced or julienne
1 x celery stick sliced or julienne.
1 x tablespoon soya sauce
1 x packet 2 minute noodles
2 x shallots sliced.
You don't need to add salt as the stock already has salt in it as well as the soya sauce
Method
1. Add everything in a pot except noodles and shallots
2. Bring to the boil then simmer for 15 minutes with lid on
3. Bring back to boil and add noodles cook 2 minutes then turn off heat and add shallots.
Enjoy !
If you want to use a homemade stock below is my favourite stock recipe.
1 x bag chicken bones ( from your chicken shop prices are between $1 to $2 a bag )
1 x onion peeled and left whole
1 x large carrot cut into 3
2 x sticks of celery cut into 3
1 teaspoon of salt n pepper.
Method
1. Put everything into a 6 to 8 litre pot then cover with water.
2. Bring to the boil then simmer on low with lid on for 2 to 4 hours . 2 if you are in a hurry 4 if you are not
3. Strain and discard vegetables and either use stock for a soup or put into containers and freeze.
NOTE : If I can are simmering I leave everything in the pot and put into fridge over night , then strain and use how you want
