Easy Fried Rice

This is a dish I make often , usually when I'm making lamb chops in lemon and oregano or for a BBQ.
It's so easy and a recipe everyone wants.

Recipe and photo are mine
Ingredients
2 cups of white rice
Water
200g diced bacon
200g diced ham
3 x shallots sliced
1 x large brown onion finely chopped
2 eggs lightly beaten
1 x capsicum red or green diced
150g peeled prawns
2 tablespoons of soya sauce
2 sticks of shallots diced
METHOD
1) Steam rice in a rice cooker or add rice to saucepan and cover with water bring to the boil, then turn down low and cover simmer for 20 minutes
2) Add 1 tablespoon of oil to wok or frypan, add onion and fry until transparent not brown
3) Add bacon and capsicum cook for 2 minutes then add ham, remove pan from heat until you have cooked egg
4) in a small frypan add a tablespoon of butter when melted pour in egg. We are sort of making an omelet, it doesn't matter if it breaks up as when it's cooked you need to chop in small piece. Add pan
with rice back to low heat
5) Add egg and prawns to rice mixture
5) Add soya sauce and salt to taste and shallots stir through using a
fork
NOTE eat by it self or as a side dish for stir fry or BBQ ect
