Easy Cucumber Salad

This salad is quick and easy to prepare with just a few ingredients, including sesame seeds, soy sauce, and dashi. Dashi is a Japanese stock made from fish and kelp that's commonly used in miso soup and noodle broths. You can find it online or in select grocery stores or simply substitute it with fish stock.
Here’s what you need:
1 large cucumber
50g sesame seeds
1 tbsp sugar
2 tbsp dark soy sauce
3 tbsp dashi or fish stock
To start, toast the sesame seeds until golden and then crush them with sugar using a mortar and pestle. Mix in the soy sauce and dashi until everything is combined.
Next, prepare the cucumber by cutting it lengthways and using a teaspoon to remove and discard the seeds. Cut it into strips about 6cm long.
