Easy Chicken Pie

Chicken pie is a dish that originated in England. It is traditionally made with a pastry crust and a filling of chicken and vegetables. Chicken is a versatile meat that goes well with various flavours. In this dish, the chicken pairs well with the carrots, potatoes, peas, and onions. The thyme also adds a nice flavour to the dish.
This dish is delicious and nutrient-packed because it is made with chicken, which is a good source of protein, and vegetables, which are a good source of vitamins and minerals.
Ingredients:
- 400g pack of skinless chicken thighs, cut into chunks
-1/4 kg potatoes, cut into small pieces
- 150ml chicken stock
- 325g can of sweetcorn, drained
-1/4 kg carrots, cut into small pieces
-1/4 kg peas
-1/2 onion, chopped
-1/2 tsp thyme
-Salt and pepper
-2 sheets of ready-made puff pastry
-1 egg, beaten
Instructions:
1. To make the chicken pie, preheat the oven to 190 degrees Celsius.
2. Cook the potatoes, carrots and onions in boiling water for 10 minutes. Add the chicken and thyme and season with salt and pepper. Cook for a further 10 minutes.
3. Pour in the chicken stock, bring to a boil, and cook for 20 minutes until the chicken is cooked. Mix in the corn.
4. Roll out one puff pastry on a lightly floured surface and use it to line a pie dish. Cut out a circle slightly larger than the pie dish. Pour the chicken mix into the puff pastry. Get the other puff pastry sheet and roll it out on a lightly floured surface. Lay it on top of the baking dish.
5. Crimp the edges of the pastry. Brush the pastry with the beaten egg. Cut a few slits in the top of the pastry to allow steam to escape.
6. Bake the pie in the oven for 30 minutes or until the pastry is golden brown. Serve hot with some green beans or a salad.
There are a few ways you can make this dish extra special. Try adding some herbs to the filling or using a different type of cheese in the pastry. You could also try adding some bacon or ham to the filling.
