Easy Apple Cake

With Mother's Day on Sunday this is the perfect cake for this special day

Delicious by itself or serve with cream or ice-cream

Recipe by The Modern Nonna

Ingredients​

  • 1 cup sifted plain flour ( I used Lighthouse cake flour)
  • ½ cup sugar
  • ¾ tablespoon baking powder (make sure it's not expired)
  • 3 large eggs, at room temperature
  • ½ cup avocado oil or any neutral cooking oil
  • 3 medium-sized apples, peeled and diced small, I used granny smith (2 to 2 1/2 cups of diced apple total)
  • Icing sugar, for dusting

Liquid Topping​

  • ½ cup milk
  • 2 tablespoons butter
  • 2 tablespoons sugar

Instructions​

  • Preheat the oven to 175°C / 155°C fan-forced. Grease and flour a 7-inch springform pan and line bottom with baking paper. You can use a larger springform pan, but this will result in a thinner cake. Monitor closely during baking, as the time may vary.
  • In a bowl, add the flour, sugar, and baking powder, and stir to combine. Add the eggs and oil, and stir until fully combined. You should have a smooth but thick batter. Gently fold the apples into the batter until they are fully coated.
  • Pour the batter into the lined pan, and bake for 35 to 40 minutes or until a toothpick comes out clean.
  • About 5 minutes before the cake is done, warm the milk, butter, and sugar in a small pot over medium heat. Whisk until the mixture heats up and the butter and sugar fully dissolve. Remove from the heat.
  • Remove the cake from the oven, and using a long skewer or chopstick, gently poke holes into the top of the cake, making sure to insert the skewer from the top to the bottom. I poke about 25 to 30 holes, making sure they are evenly spaced apart.
  • Take the warm milk mixture and gently pour it over the top of the cake. The cake will absorb this delicious mixture as it cools, so trust the process.
  • Once the cake absorbs the liquid, remove the springform and baking paper from the cake. Place the cake onto a plate and let cool for 10 to 15 minutes before you dig in! Make sure the cake has absorbed the topping as the interior will have a custard-like texture.
  • Optionally, dust the cake with icing sugar once it has cooled and enjoy

Ingredients​

Pastry
  • 1 3/4 cups plain flour
  • 1/2 cup of self-raising flour
  • 1 teaspoon salt
  • 185g unsaltedbutter, cubed
  • 8 tablespoons ice water, or as needed
FILLING
  • 8 large granny smith apple, cored, sliced, peeled
  • ¾ cup caster sugar
  • 2 tablespoons plain flour
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ lemon
  • 1 egg, beaten
  • 1 tablespoon sugar

METHOD​

  1. In a medium-sized bowl, add the flour and salt. Mix with fork until combined.
  2. Add in cubed butter and break up into flour using your fingers. Mixture will resemble bread crumbs.
  3. Gradually add the ice water and continue to mix until the dough starts to come together. You may not need all of the water, but if the dough is too dry then add more. The dough should not be very sticky.
  4. Work the dough together with your hands and turn out onto a surface. Work into a ball and cover with cling wrap. Refrigerate.
  5. Peel the apples, then core and slice.
  6. In a bowl, add the sliced apples, sugar, flour, salt, cinnamon, nutmeg, and juice from the lemon.
  7. Mix until combined and all apples are coated. Refrigerate.
  8. Preheat the oven 200°C 180°C fan-forced
  9. On a floured surface, cut the Pastry dough in half and roll out both halves until round and about ⅛-inch (3 mm) thick.
  10. Roll the dough around the rolling pin and unroll onto a pie dish making sure the dough reaches all edges. Trim extra if necessary.
  11. Pour in apple filling mixture and pat down.
  12. Roll the other half of the dough on top.
  13. Trim the extra dough from the edges and pinch the edges to create a crimp. You can also use the back of a fork. Make sure edges are sealed together.
  14. Brush the pie with the beaten egg and sprinkle with the caster sugar.
  15. Cut four slits in the top of the pie to create a vent.
  16. Bake pie for 50-60 minutes or until the crust is golden

  17. Allow to cool completely before slicing.
  18. Top with ice cream and serve.
  19. Enjoy
