Easy and Really Nice Smashed Potatoes

One of my favourite vegetables has to be the humble potato . So much so I can eat it as a meal.
I have added stuffed potato recipes before and this one is The Smashed Potato
Serves: 4
Prep Time: 5 minutes
Cooking Time: 40 minutes
Ingredients:
4 medium New or red potatoes, skin on and washed
2 tbsp olive oil
2 tbsp melted butter
1 tsp dried mixed herbs
1 tsp fresh parsley (optional)
salt and pepper
Method:
• Preheat oven to 180°C or 160 C fan forced
• Prick the potatoes several times with a fork to pierce the skins, then place in the
microwave and cook until soft (about 10 minutes).
• Place the potatoes on a baking tray and using a potato masher push down to
smash them open.
• Drizzle over the olive oil and butter, then sprinkle with the herbs, salt and
pepper.
• Bake for 30 minutes or until golden and crunchy.
optional if you want to in the last 10 minutes add grated tasty cheese
