Easiest ever meal? One pot beans, rice & greens.

Members, isn’t it nice to have a dinner recipe that you can set and forget? The sun sets sooner, it’s colder and we want to spend more time under a blanket on the couch or lapping up the last of the sunshine, not stuck in the kitchen. That’s how we discovered that you can cook an entire meal in your rice cooker! This is a humble dish of beans, rice and spinach that will leave you full for longer. Plus, you’ll only have to wash up the rice cooker and your dinnerware. It almost sounds too good to be true, right? But April swears by this!
2 cups of spinach leaves (washed)
1 cup white rice (can substitute for your favourite, however, cooking time will vary)
2 cups water or vegetable broth
1 can of black beans, drained and rinsed
1/2 teaspoon garlic powder*
1/2 teaspoon onion powder*
1/2 teaspoon cumin*
1/2 teaspoon oregano*
1 bay leaf*
Salt to taste
2 tsp nutritional yeast (optional but recommended)
*If you don’t have these on hand, don’t buy them specifically for this meal. Just use whatever you have that sounds good to you.
In a rice cooker, add the uncooked rice, water, black beans, and seasonings. Stir to combine and cover.
Cook on the white rice setting. (or just change it over to ‘cook’ if you have the Kmart one like me!). It will take roughly 25 minutes.
Once the rice looks close to being done, remove the bay leaf and add your washed spinach and nutritional yeast and mix through.
Leave to finish cooking.
Once the rice is cooked, add any additional seasoning to taste.
Serve with air-fried salmon or grilled chicken to add extra protein!
