Delicious Chicken Supreme

Chicken supreme is a dish made with chicken breasts that have been dredged in flour, pan-fried, and then simmered in a sauce made with white wine, chicken broth, and heavy cream. The dish is then often served with rice, pasta, or potatoes. This recipe is easy to follow and results in a flavourful and satisfying meal

Ingredients:

-2 chicken breasts
-2 bacon rashers, chopped into thin lardons
-1/4 cup all-purpose flour
-1 tablespoon olive oil
-1/4 cup white wine
-1/4 cup chicken broth
-1/4 cup light cream
-1 small onion, thinly sliced
-2 garlic cloves, minced
-1/4 teaspoon salt
-1/4 teaspoon black pepper
-8 white mushrooms
-1 handful of flat parsley leaves, chopped



Instructions

1. Get the chicken breasts and season both sides with salt and pepper. Add a little flour to a plate and coat each chicken breast in the flour—dust off any excess.

2. In a frying pan, heat oil over medium heat. Add chicken and cook until browned on all sides. Remove from the frying pan and set aside on a plate or container.

3. Using the same pan, add more oil if too dry. Then add mushrooms, bacon, onions, and minced garlic cloves.

4. Deglaze with the white wine and keep reducing. Once the wine is almost evaporated, add the chicken stock and reduce it by half.

5. Add the cream, then season it with salt and pepper and bring to a gentle simmer.

6. Return the chicken breasts to the pan. Simmer very gently for about 10 minutes.

7. Remove the chicken breasts and place them on serving plates. Continue to reduce the sauce until it has the desired thickness, add the chopped parsley, and mix well.

8. Pour the sauce over the chicken breasts and serve.

To make this dish extra special, you could try adding some different herbs and spices to the sauce or serving it with a side of roasted vegetables.
