Delectable Millionaire Shortbread

For those of us with a sweet tooth, millionaire shortbread is the perfect dessert. It is a three-layer treat made with a shortbread crust, a caramel filling, and a chocolate topping.

According to Wikipedia, the name "millionaire's shortbread" appears to have originated in Scotland. The "millionaire" prefix to millionaire's shortbread or millionaires slice implies a level of decadence and wealth to the sweet treat, that it is an upgrade from regular shortbread. It could also be a reference to the caloric intake of the dessert. A Scottish saying warns consumers that "The millionaire’s shortbread is often richer in calories than the one who tastes is in hard cash" - so enjoy in moderation!

Ingredients:
1 cup (226 grams) unsalted butter at room temperature
1/4 cup (50 grams) granulated white sugar
1/4 cup (50 grams) light brown sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
2 cups (240 grams) all purpose flour
1 cup caramel sauce (homemade or store-bought)
1/2 cup semisweet chocolate chips

Directions

1. Preheat oven to 350°F (175°C). Grease a 9-inch (23 cm) square baking pan with butter.
2. In a medium bowl, cream butter and both sugars together until light and fluffy. Beat in vanilla. In another bowl, whisk together flour and salt. Gradually add dry ingredients to butter mixture, mixing until just blended.
3. Press dough evenly into the bottom of prepared pan. Bake for 20 minutes, or until golden brown.
4. Remove from oven and let cool completely
5. Spread the caramel sauce in a thin layer over the shortbread and place in fridge to harden.
6. Melt the chocolate chips in 15 second bursts in the microwave, stirring each time.
7. Pour melted chocolate over caramel. Refrigerate for at least 2 hours, or overnight. Cut into squares and serve.

Shortbread​

Ingredients​

  • 1/2 lb butter
  • 5 oz castor sugar
  • 12 oz flour (take out 1 tablespoon of flour and add 1 of ground rice.)

Method​

Cream butter and sugar and add flour. Knead until like putty.
Roll into long roll, cut into pieces and bake in moderate oven until golden brown.

Sooo easy and Soooo yummy.

Both my Mum and my Granma made this caramel slice. They didn't call it Millionaire Shortbread but it's the same recipe. Mum and Granma both msde their own caramel which was especially yuuummmy!
