Why do stalks stand on one leg?

If they lifted it up, they would fall over.

Flowers have storks & normally only one.

Sorry flowers do have stalks, not storks. But the joke was a silly dad joke & relating to the birds stalks.

Can some-one tell me an easy way how to remember stalactites and stalagmites ... which grows up and which grows down?

The central consonant tells you where they grow from:
Stalactites have c = ceiling
Stalagmites have g = ground
