Are you short on time but craving a delicious dinner? These curried potato patties with zucchini salad are a perfect choice. This dish is a fusion of Indian and Mediterranean flavours that can be served as a main or side dish. The curry powder and spices in the patties give them a unique and delicious flavour, while the zucchini salad adds a light and refreshing touch to the plate. Not to mention, this dish is nutritious and incredibly easy to make.

Ingredients:

600g brushed potatoes, peeled, chopped

1/4 cup (60ml) olive oil

1 brown onion, finely chopped

1 tsp curry powder

400g can lentils, rinsed, drained

1 zucchini, cut into thin strips lengthways

2/3 cup (190g) yoghurt

1 tsp ground cumin seeds

120g mixed salad leaves



Instructions:

1. Cook the potato in a saucepan of boiling water until tender. Drain well and return to pan. Mash with a potato masher or fork until almost smooth.

2. Meanwhile, heat 1 tablespoon of the oil in a medium frying pan over medium heat. Add the onion and cook, stirring, for 2-3 minutes until it softens and lightly browns. Add the curry powder and cook for 30 seconds. Add the lentils and toss to combine. Remove the pan from the heat.

3. Heat a large frying pan over high heat. Cook half of the zucchini for 1 minute on each side until it's tender. Repeat with the remaining zucchini. Set it aside to cool.

4. Combine the lentil mixture with the mashed potato and mix well. Divide the mixture into 8 equal portions and shape each one into a patty, pressing firmly to shape. Heat 1 tablespoon of the remaining oil in a frying pan over medium heat. Cook the patties in batches on each side for 2-3 minutes until they are golden brown and heated through.

5. In a bowl, mix the yoghurt and cumin. Combine the cooked zucchini, salad leaves, and the remaining oil in another bowl. Serve the patties and salad drizzled with the yoghurt mixture.

To make this dish extra special, you can garnish the patties with fresh herbs such as coriander, mint or basil. You can also top the patties with some crumbled feta or grated cheese. You could serve the patties with warm pita bread or add some cooked brown rice or quinoa to the salad for a more filling meal.
