Creamy Chicken Stew


Creamy chicken stew is a dish usually made with chicken, cream, vegetables, and various spices. The dish is thought to have originated in the Middle East, and it is a popular dish in many countries. The dish is usually served with rice or bread. It is a comforting and delicious meal, perfect for cold winter nights.

To make this dish, you need:

-4 small chicken thighs
-2 leeks, halved and finely sliced
-2 tbsp olive oil
-250ml chicken stock
-1 tbsp butter
-1 tbsp Dijon mustard
-75g crème fraîche
-150g frozen peas
-3 tbsp dried or fresh breadcrumbs
-small bunch of parsley, finely chopped

Instructions:

1. Tip the leeks and oil into a casserole dish on low heat. Add the butter and cook everything very gently for 10 mins or until the leeks are soft.

2. Get a large non-stick frying pan and set it on medium heat. Put the chicken skin-side down. Cook until the skin browns, then turn and brown the other side.

3. Add the chicken to the leeks, leaving behind any fat in the pan.

4. Add the stock to the dish and bring to a simmer. Season well, cover and cook for 30 mins on low.

5. Stir in the mustard, crème fraîche and peas and bring to a simmer.

6. Mix the breadcrumbs and parsley, and sprinkle them over the chicken before serving.

To make this dish extra special, try using different herbs and spices in the breadcrumb topping. You could add some grated cheese to the breadcrumbs for a cheesy flavour. Serve with a dollop of yoghurt or sour cream on top, if you like.
