Cream of Broccoli Soup

I first tried this soup while in hospital 3 years ago. If I was asked to make it before this I would have said no.
I can't believe how delicious it is. And broccoli atm is priced good.

Prep time : 15 minutes
Cooking time: 25 minutes
Serves 4

Ingredients

750g broccoli 🥦
3 cups of chicken stock
Pinch of ground nutmeg
1 cup of cream

Method.

1. Cut the broccoli stems and florets into chunks.
Place into a large saucepan with 1 cup of stock. Cover and bring to the boil. Reduce heat to low.cover and simmer for 10 minutes or until tender. Stiring often.

2. Let the soup cool a little, then blend in batches in a food processor or use a stick blender ( I use either)
Return to pot with remaining stock. Add cream and stir over medium heat until heated through. Before serving , season with salt n freshly ground black pepper

Variation: substitute broccoli with cauliflower or use half broccoli and half cauliflower
