Craving something hot and cheesy this winter? These homemade arancini balls are perfect for you!

For those of you who are unfamiliar, arancini are a type of Italian street food made from sticky risotto balls that are filled with oozy mozzarella and lightly fried until perfectly crisp and golden.

They are traditionally served with a hearty tomato sauce, but on their own, they make a scrumptious snack any time of day!



A famous home cook on social media has recently revealed her recipe detailing how to make mouth-watering mozzarella-stuffed arancini balls. Not only do they look delicious, but they are also so easy to make that you can make them at home too!

The recipe was shared by Montanna Hughes, better known online as "MonMackfood," with her tens of thousands of followers on Instagram and TikTok.

Here are the ingredients you will need:
  • 30g butter
  • 1 brown onion, diced
  • 5 cloves garlic, minced
  • 1 cup arborio rice
  • 3-4 cups chicken or vegetable stock
  • 100g grated parmesan
  • 1/2 cup wine (Montanna used 1/4 cup of Pernod)
  • Salt and pepper to taste
  • Mozzarella, cut into 1-2cm cubes
  • Plain flour
  • 2 eggs, beaten
  • Panko bread crumbs


And here are the steps to follow:

First, put a saucepan on medium heat and add the butter. Once the butter has melted and the pan is hot, add the onion and garlic and cook them until they are soft and clear.

Add the rice and cook it for a few minutes, stirring occasionally, until it begins to smell toasty or nutty. According to Montana, the rice shouldn't really change colour, just achieve a pleasant aroma.

Next, add the wine and a ladle of stock. Reduce the heat to low and continue to stir until the liquid is completely absorbed.

Add the next ladle of stock and keep doing this until the rice is fully cooked. Depending on the type of rice you use and how hot your pan is, you may need more or less stock. (When the temperature is increased, there is a greater chance that more of the liquid will evaporate rather than be absorbed by the rice.)

Add the parmesan after that, then season with salt and pepper.

Place on a tray and then stick them in the refrigerator or freezer for a few hours, or until they are firm but not frozen.

When the mixture is firm, form a disc, place a piece of mozzarella in the centre, and then roll it into a ball. Do this until the mixture runs out.

Coat the balls in flour, then coat them in beaten egg, and lastly, panko bread crumbs. Cook them in oil for 5 to 7 minutes or until golden and crisp.

Serve them on a plate right away and enjoy!
