Coriander Lime Prawn with Zucchini Noodles is a healthy and delicious dish that is perfect for a quick and easy weeknight meal. This dish is traditionally made with prawns, zucchini noodles, coriander, lime, and garlic.

Ingredients:
350g prawns, shelled and deveined
3 tablespoons olive oil
3 cloves garlic, minced
1 pinch red pepper flakes (optional)
1/4 cup vegetable broth
1 teaspoon honey
Juice of 1 1/2 limes
3 medium zucchini, spiralled or cut into noodles
1 teaspoon lime zest
2 tablespoons coriander, chopped
Salt and pepper to taste
Instructions:
1. Mix together 2 tablespoons of olive oil, garlic, red pepper flakes, 1 tablespoon of coriander, honey, lime juice and lime zest in a bowl.
2. Then, add the uncooked prawns and toss to mix well. Let the prawns marinate for 15 to 20 minutes.
3. After the prawns have marinated, heat 1 tablespoon olive oil in a pan over medium-high heat. Spoon the prawns into the pan and cook for 2 minutes. Flip the prawns and add the marinade. Cook for 1 more minute and set the prawns aside.
4. In the same skillet, add vegetable broth to deglaze and simmer for 2 minutes. Add the zucchini noodles and cook until just tender, about 2 minutes. Add the prawns and season to taste.
5. Toss everything and serve immediately, topped with additional coriander.
To make this dish extra special, you could add some chopped garlic to the pan when cooking the prawns for an extra flavour. Add a pinch of cayenne pepper to the dish for a bit of heat.
