Classic Meatloaf

Nothing quite says home cooking like a classic meatloaf. This dish is a staple in many households across the world and is usually served with mashed potatoes and gravy. It's comfort food at its best! This juicy and flavourful meatloaf is sure to please.

Ingredients:

1 tbsp olive oil

1 brown onion, finely chopped

2 garlic cloves, crushed

1 1/2 cups fresh breadcrumbs

500g beef mince regular

300g pork and veal mince

1 egg, lightly beaten

1 tbsp wholegrain mustard

2 tsp Worcestershire sauce

3/4 cup tomato sauce

2 tbsp brown sugar

Mashed potato to serve

Steamed green beans to serve

Gravy, to serve



Instructions:

1. Preheat oven to 200°C fan-forced and grease a 9cm-deep, 9cm x 19cm (base) loaf pan.

2. Heat oil in a pan over medium heat and cook onion and garlic until softened. Set aside and let cool for 5 minutes.

3. Mix onion, breadcrumbs, minced beef, egg, mustard, Worcestershire sauce, and 1/2 cup tomato sauce in a bowl. Spoon the mixture into the pan and level with a spoon.

4. Combine the remaining sauce and sugar in a small bowl. Spread over the top of the mince. Bake for one hour or until the meatloaf is browned.

5. Drain juices from the pan and set aside for 5 minutes.

6. Serve with potatoes, beans and gravy.

For extra flavour, try adding some diced celery, grated carrot, or diced capsicum to the mince mixture. You can also add some finely chopped herbs such as parsley, oregano, or thyme.

Try adding a teaspoon of chilli flakes or some diced jalapeno peppers to the mince mixture for a different twist. Finally, for a special touch, sprinkle some freshly grated parmesan cheese over the top of the meatloaf before baking. Enjoy!

I have never & will never eat something with mince in it, Even though I went through my childhood during the second world war mum never had to resort to buying mince of any kind so I was not introduced to any dish that needed it. I have a very narrow of food likings & have never wanted to try anything that came from another country. So no Spag bol or rice for me & things like spinach are not as good as watercress in my humble opinion, I love my chicken & bacon & good dairy foods like cheddar cheese, not that tasteless soft stuff like Fetta. I am sure that if you have eaten meatloaf all your life that you would love the nostalgia of trying this one but it also has another thing in it I don't eat GARLIC. To me, this is not a shade on the onion scale.
